There are way more rounds about fall than about any other season. Contemporary pop artists seem to often have a song involving summer (Summertime, Summerboy, Summer Love, etc). A certain number of Christmas songs are actually just about winter.

What genre of music takes spring as its season?

yeah, I think troubadour songs and related (like madrigals) are very spring-y.

Vivaldi? (Though he did all four, I suppose)

Stravinsky's The Rite of Spring and Copland's Appalachian Spring are pretty famous - I'm not sure I know of classical works that famous about any other season...
