There is a Volume II of Castle Waiting! It ends in a weird place, completely abruptly with no plot closure, and Linda Medley took her name off the book, so apparently something went awry between her and the publisher, but still! A whole additional book of Castle Waiting, and apparently there are some single issues out there somewhere that wrap up some of the loose ends!

I don't know what Castle Waiting is -- should I read it? (And, perhaps, the sequel?)

You should absolutely read volume 1 of Castle Waiting. It's a wonderful premise, wonderfully and beautifully told. The idea is that, in a land where all of the fairy tales are happening, and so you can meet Puss in Boots or the Rusalka etc.; there's the castle where Sleeping Beauty falls asleep. When she wakes up, she ... effs off with Prince Charming, leaving a castle full of retainers. They live out their lives waiting for the next king or queen, and taking in all sorts of folks who need a place to live or a little help. It's a beautiful and humane story.

The second volume ... well, toward the end of the first, the pace slowed considerably and the story zoomed waaaay in on one character's backstory. I didn't mind because that story was so interesting. However, I felt like Volume II continued at that pace, and I spent most of the book wondering where it was going. I enjoy spending time with the characters, and that's what the book does, but ... I dunno, I don't feel like it's going anywhere. I'm waiting, like the castle.
