recipe rec: kiwi muffins
Nov. 7th, 2011 07:44 pmThis recipe solved a very specific problem for me, the problem of Too Many Kiwis. Most people who pick out their own produce rather than play the Boston Organics box lottery are unlikely to have this problem, but now you know what to do if it ever comes up!
The recipe is here at a blog called "Cooking With Amy" - this is the only thing I've tried (so far) from her blog. And I'll also copy it here:
Kiwi Matcha Lime Tea Cake
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
2 teaspoons matcha powder
1/2 teaspoon salt
1/2 cup butter, (1 stick) softened
2/3 cup granulated sugar
2 large eggs
1 cup peeled mashed very ripe kiwi fruit, green, yellow or combination (three kiwis, when I did it)
Zest of one lime
Preheat oven to 350 degrees. Grease a 9 X 5 loaf pan, preferably non-stick. Whisk together flour, baking powder baking soda, matcha powder and salt and set aside.
In a large bowl cream butter and sugar together until light and fluffy. Add eggs one at a time to creamed mixture and thoroughly combine. Stir in mashed kiwi fruit and lime zest. Fold in dry ingredients, stirring until batter is completely moistened. Spoon batter into pan and bake for one hour or until toothpick inserted comes out clean. Cool for 20 minutes on wire rack. Remove from pan and continue cooling on rack.
Matcha powder is finely ground green tea - I left it out (as she says you can do) because I don't own any, and thought they were fine without, although I'm sure they'd be even more interesting with it. I used 50/50 whole wheat/white flour because I always do that for things that don't seem picky about it. I baked it as muffins - 24 mini-muffins plus 10 regular-sized cups maybe 1/3 full, and they took about 15 minutes to bake (I did 17 but I think they were in slightly too long.) As promised they were tangy little muffins and everyone I gave them to seemed to think they were pretty good.
